    Growers Send to a friend Print Recipes Moroccan chicken with roasted vegetables chickpeas Preparation time 15mins Cooking time 1hr 20mins Serves 4 Created by Ingredients 1 tbs Woolworths Select Moroccan seasoning 1 1 2 tsp sea salt flakes 1 2 tsp smokey paprika 1 4 tsp white pepper 2 oranges 3 garlic cloves 1 7kg macro wholefoods market free range whole chicken 1kg sweet potato peeled cut into 6cm pieces 2 tbs olive oil 2 zucchinis trimmed halved lengthways cut into 2cm thick slices 400g Woolworths Select Chickpeas drained rinsed 1 2 cup raisins 2 tbs slivered almonds 1 4cup parsley leaves roughly chopped Method Preheat oven to 200 Combine seasoning salt paprika and pepper in a small bowl Zest both oranges and reserve Remove white pith from 1 orange and cut into 12 wedges Reserve remaining orange Combine half the wedges with 1 tsp of spice mix and garlic Place chicken into a roasting pan Place spiced orange wedges inside chicken and secure legs with twine Rub remaining spice mix over chicken Cook in oven for 20 minutes Coat sweet potato with 1 tbs oil Add to pan with chicken and cook in oven for 30 minutes Meanwhile squeeze juice from remaining orange Combine zucchini chickpea raisin and remaining orange wedges in a bowl Stir in juice and remaining oil Add to chicken Cook for 30 minutes Place almonds onto a baking tray Roast for 8 minutes or until golden Sprinkle almonds parsley and reserved zest over vegetables Serve chicken with vegetables Tip Zest is the outermost part of citrus rind that contains flavoursome oils Remove using a zester which has small sharp holes or a fine grater Nutritional Information Per Serve Per serve 61g protein 54g fat 14g saturated fat 66g carb 12g dietary fibre 4125 kJ 985

    Magazine Meet Our Growers Send to a friend Print Recipes Veal schnitzel with zucchini and potatoes Preparation time 15 mins Cooking time 30 mins Serves 4 Created by Ingredients 750g red skinned potatoes cut into 2cm cubes Olive oil cooking spray Sea salt flakes 4 Slices Woolworths Fresh White Sandwich Bread roughly chopped 1 2 cup continental parsley leaves 20g parmesan finely grated 1 2 cup buttermilk 1 3 cup plain flour 4 Heart Smart Veal Schnitzel 2 zucchini sliced 400g can Woolworths Select Whole Cherry Tomatoes salad to serve Method Preheat oven to 220 degrees celcius Line a large baking paper Spread potatoes onto tray and spray with olive oil Sprinkle with sea salt flakes Bake on top shelf of oven for 30 mins or until crisp and golden Meanwhile process bread and parsley in a food processor until fine breadcrumbs form Transfer to a shallow dish Add parmesan and stir until well combined Pour buttermilk into a shallow dish and place flour on a plate Lightly coat schnitzels with flour Dip into buttermilk then coat with breadcrumb mixture pressing firmly Heat a large non stick frying pan over medium heat Spray schnitzels with olive oil Cook schnizels 2 at a time for 3 mins each side or until golden Transfer to a large plate Place in oven to keep warm Wipe pan clean and return to heat Add zucchini to pan and cook for about 3 mins on each side or until browned Add cherry tomatoes stir to combine and bring to the boil Reduce heat and simmer for 3 mins or until sauce thickens Serve schnitzels with potatoes zucchini mixture and salad Tip Nutritional Information Per Serve Per serve 40g protein 65g fat 2 5g saturated fat 57g carbohydrate 7g dety fibre 1880Kj 450 Cals Share on
