    Guarantee Fresh Magazine Meet Our Growers Send to a friend Print Recipes White Bean Stuffed Capsicum and Tomato Preparation time 15 mins Cooking time 40 mins Serves 4 Created by Ingredients 4 small red capsicum 6 large vine ripened tomatoes 2 tsp olive oil 1 red onion finely chopped 2 garlic cloves crushed 1 large lemon finely grated rind and juice 2 tbs fresh thyme leaves 2 x 400g cans Woolworths Select White Cannellini Beans drained and rinsed olive oil spray 1 3 cup basil pesto Method Preheat oven to 180 degrees celcius Line a large baking tray with baking paper Slice tops from capsicums and 4 tomatoes Reserve tops lids Using a tsp remove pulp from the 4 tomatoes and remove seeds from capsicums Place tomato pulp in a small bowl Finely dice remaining 2 tomatoes and add to tomato pulp Heat oil in a frying pan over a medium heat Add onion and garlic and cook for 3 mins or until onion is soft Add reserved chopped tomatoes lemon rind 1 3 cup lemon juice and thyme leaves Stir until well combined and mixture comes to the boil Reduce heat and simmer until liquid has almost evaporated Add beans to tomato mixture Roughly mash beans Remove pan from heat Spoon mixture into prepared capsicum and tomatoes Place lids onto vegetables and place in oven Spray capsicum and tomatoes with olive oil Bake for 20 25 mins or until capsicum and tomatoes are tender Place a capsicum and a tomato onto 4 serving plates Remove lids and spoon 2 tsp basil pesto on each vegetable Top with lids and serve with crusty bread Tip Nutritional Information Per Serve 16g protein 10g fat 0 5g saturated fat 30g carbohydrate 16g dietary fibre 1175 kJ 280 Cals Share on Facebook Tweet
